Welcome to No Buy Year!

After years of endless shopping cycles I decided to hit pause. This blog is my real-time diary of choosing intentional living over impulse buys.

I’m sharing what happens when you start appreciating what you already have, instead of acquiring more. From shooping my own stash to budgeting my finances – I’m not reinventing the wheel, I’m sharing what worked for me… and what didn’t.

Glad you are here, let’s do this together!

This blog documents my personal journey and experiences; it is not financial advice.

If you’re following a No Buy Year or just trying to stretch your grocery budget, one of the most powerful habits you can build is clearing out the fridge before anything goes to waste. I struggle with using everything up on time, so today, I decided to share one of my absolute go to meals for using up odd bits of vegetables and ingredients near their expiration date: Scrappy Buckwheat Pancakes.

A Taste of Home on a Budget

Coming from Poland, buckwheat (kasza gryczana) is a comforting staple I grew up with – it’s nutritious, cheap and incredibly versatile. However, after moving to the Netherlands, I quickly discovered that roasted buckwheat isn’t available in local Dutch supermarkets. And while specialty Polish stores carry it, they tend to be significantly more expensive for daily pantry essentials.

My solution? Every time we visit family back in Poland, I stock up on bags of buckwheat. Buying in bulk back home keeps my pantry well stocked for a fraction of the cost and forms the ideal base for low cost, high flavor meals.

Why They’re Called “Scrappy” Pancakes

I call these “scrappy” because there is no uniform recipe. They are meant to be a canvas for whatever needs rescuing in your vegetable drawer.

In this batch I used: leftover carrots, red bell pepper, green beans, mozzarella that was about to expire (it melts into gorgeous cheesy pockets as they fry!) and 2 eggs.

How to Make Them

  1. Cook the buckwheat: boil your buckwheat according to the package instructions and let them cool slightly.
  2. Mix it up: in a large bowl, mix the cooked buckwheat with 2 eggs (which act as the binder), your chopped leftover veggies and any cheese, spices or herbs you have on hand and think would go well in this dish.
  3. Pan fry: heat a little bit of sunflower oil in a pan over medium heat. Dollop spoonfuls of the mixture into the pan, flatten them slightly with a spatula and fry until crisp and golden brown on both sides.

Why This Meal Is Worth Trying

  • Zero food waste: prevents fresh produce and dairy from ending up in the trash bin,
  • super cost effective: uses low cost staples to turn tiny fractions of leftover veggies into a main dish,
  • incredibly satisfying: buckwheat is rich in fiber and protein, making these far more filling than standard flour-based pancakes,
  • delicious 😋

Next time you do a fridge audit before your weekend grocery run, try gathering those leftover veggie ends and making a batch of these. They are absolutely delicious.
